Coconut rice with ndengu stew
Steps

Boil your 500gms rice with 3 glasses of water plus 100mls of coconut milk. Add salt to taste.

For stew, fry your onions till golden brown, add your ginger and garlic, let them cook for 1 min

Add your green pepper and tomatoes, let them cook for 2min
- 4
Add your grated carrots and mix them well, add your tomato paste and a pinch of salt, cover and let cok for two min
- 5
Add your boiled green grams and the other 100 ml of coconut milk and let them boil till ready.

Serve hot
