Oaty and Lemony Biscuits 🍋

These biscuits are great and made with simple ingredients. They're #vegan too! You can swap out the vegan ingredients for dairy products, and use plain flour with baking powder if you don't have any self-raising.

These biscuits are great and made with simple ingredients. They're #vegan too! You can swap out the vegan ingredients for dairy products, and use plain flour with baking powder if you don't have any self-raising.

Steps

Cream the Softened Butter together with the sugar. Leave out 1 tablespoon of the sugar and place in a small ramekin. Add the lemon zest and juice. Pre-heat the oven at 160 degrees and line 2 baking trays.

Add the flour and oats, leave 1 tablespoon of the oats and place in a separate ramekin. Mix, then add the oat milk, tablespoon at a time to make a soft dough (you might need to add more or less oat milk.)

Roll the dough into balls, then roll each ball in the sugar and oats, making sure they are well coated. Place the biscuit balls on the baking trays. Bake for about 20 mins and enjoy!
