Ingredients

Makes about 25 crêpes
  1. 2heaping tablespoons all-purpose flour
  2. 3 1/3 cupsextra fine semolina (about 500 grams)
  3. 3 tablespoonssugar
  4. 2 tablespoonsorange blossom water
  5. 3 2/3 cupswater (about 850 ml)
  6. 2 packetsbaking powder
  7. 2 teaspoonsactive dry yeast (about 8 grams)

Steps

  1. 1

    Place all the ingredients in a large bowl and blend until the batter is smooth and free of lumps.

    Let the batter rest for 30 minutes to 1 hour, then stir gently again.

    Cook the crêpes in a skillet on one side only until holes form on the surface.

    Serve warm with honey and melted butter, or any toppings you like!
