Stewed Potatoes with Mushrooms

Cut the potatoes in half lengthwise, then slice into half-moon shapes (with or without skin).
Heat the olive oil in a skillet over medium heat.
Add the potatoes, cover, and cook until they are tender, stirring occasionally so they cook evenly. Season with salt and pepper. Transfer to a plate and set aside.
In the same skillet, lightly sauté the garlic and onion.
Add the mushrooms, parsley, and chives, and cook.
Return the potatoes to the skillet and adjust the seasoning.
