Ingredients

  • Forpreparing kulcha:-
  • 2 1/2 cupall purpose flour/maida
  • 4 tbspcurd/dahi /plain yogurt
  • 1/2 tspbaking powder
  • 1/4 tspbaking soda
  • 3/4 cupwater for kneading dough
  • 2 tspsugar
  • 1/2 tspsalt
  • 2 1/2 tbspghee /oil
  • 4 tbspnigella seeds /kalonji
  • 1/4 cupchopped coriander leaves
  • For preparing matar curry:-
  • 1 cupdried white peas
  • 2-3 cupswater for cooking dried peas
  • 1 tbspoil
  • 1 tspcumin seeds/jeera
  • 1 tspchat masala
  • 1/2 tsproasted cumin powder
  • 1/2 tspdry mango powder/amchur
  • 1/2 tspred chilli powder/lal mirch
  • 1/4 tspgaram masala
  • 2 tbspJaljeera powder
  • Fortopping:-
  • 1Onion chopped small sized
  • 1Tomato chopped medium sized
  • 1Lemon
  • 1-2Green/red chillies slit

    Steps for preparing kulcha dough:-

    Put maida, baking powder, baking soda, salt, sugar in a big bowl and mix everything well.

  3. 3

    Now add curd, oil and little water to dry ingredients.

  4. 4

    Start kneading the dough using little water at a time. Make a soft and smooth dough.

  5. 5

    Cover the dough with a kitchen towel. Let the dough ferment for 2 hours.

  6. 6

    Let's prepare matar curry.

  7. 7

    Steps for preparing matar curry:-

    Soak the white peas in enough water overnight or for 7-8 hours.

  9. 9

    Drain the water next day and pressure cook the white peas with 3-4 cups of water.

  10. 10

    Cook for 2-3 whistles or until matar are completely cooked.

  11. 11

    Mash the matar slightly with wooden spoon.

  12. 12

    In a pan heat oil on low-medium flame.

  13. 13

    Add cumin to hot oil and saute until cumin turns brown.

  14. 14

    Turn off the heat and remove the pan from gas.

  15. 15

    Now add chat masala,cumin powder,amchur powder,red chilli powder and garam masala to the sauted cumin seeds.

    Stir and immediately add pour the mixture to cooked matar.

    Turn on the heat and cook matar for 3-4 minutes.

    Now add jaljeera powder and mix well.If the matar mixture looks dry add little water.

  19. 19

    Cook the matar till all the flavours are mixed properly for About 2-3 minutes.

    Keep matar aside while you prepare kulchas.

    Steps for preparing kulcha:-

    Heat a tava on medium flame.

  23. 23

    Make a small ball of dough,sprinkle some kalonji on ball.

  24. 24

    With the help of rolling pin roll into small kulcha.

  25. 25

    Sprinkle few chopped coriander leaves on rolled kulcha.

  26. 26

    Place kulcha on hot tawa.

  27. 27

    Apply ghee/oil when kulcha is half done.

  28. 28

    Cook the kulcha till it get golden spots and is evenly cooked.

  29. 29

    Prepare all the kulcha same way.

  30. 30

    Before serving top matar with chopped onion,tomatoes,chilies and squeeze some lemon juice on top.

    Delicious matar kulcha is ready to serve.
