Grandad's Ave con Pimiento Pâté

A super easy recipe that you can make using leftovers of that roasted chicken.
Note: This is a family recipe.
My grandad, Tata as we lovingly called him, used to make this for our "once" which is a small snack time between lunch and dinner. The first time I tried it, I was a child and didn't know why I loved it so much. He then told it was called pâté de ave con pimiento because of the chicken and the red pepper.
It is the red pepper that makes it so special, at least for me.
My grandad was the most kind, patient, and calm person I ever met. As we say in Chile, he was like a glass of warm milk.
All his food was delicious and perfect, not much or less of anything. Just right!

In the food processor, blend the chicken first then set aside in a bowl.

Blend the pepper, the garlic, and onions together until it makes a paste. Then pour it in the bowl with the chicken. Set aside.

You can blend the parsley or chop it finely. Add it to the bowl

Finally, add the mayonnaise and the salt to the bowl and mix it all together. Adjust the salt if necessary.
