Ingredients

  • 1 quartOrange juice
  • 3 Tbssalt (roughly -- a lot)
  • 1 tspblack pepper
  • 1 tsponion powder
  • Small amount Sriracha or Chipotle Tabasco, optional
  • pork chops
  • 1 jarapricot jam
  • 3-4 Tbsbrown mustard
  • hickory smoking chips

Steps

    Mix the orange juice, salt, pepper, onion powder (and hot sauce?) to make a brine. Depending how many pork chops you have, you may need to double it.

    Put the pork chops in a large zip lock bag (multiple if necessary), pour in brine to cover, and seal. Soak at least 3-4 hours. Doing these steps in the morning to grill at night is ideal.

    Mix the jam and mustard in a bowl until smooth. This is the glaze.

    Pour the brine into the toilet, being careful not to drop the pork chops. Dry the pork chops with paper towel and/or a cooling rack in the (clean) kitchen sink.

    Grill the pork chops on a hot fire with hickory smoke, to whatever doneness you like. Near the end, brush the glaze on both sides. Close the lid and let it sit for a couple of minutes to dry out and absorb more smoke.

    Since you have a hickory fire going, grilled pineapple, sweet potatoes and peaches (unripe) are all very good and fairly easy sides. If you do sweet potatoes, cut them in half inch slices, lightly coat with oil, and salt them. Peaches and pineapple just need to be cleaned, cut and put straight on the grill.
