First wash the rice and keep it aside for 30 mins. Meanwhile do all the preparation like chopping vegetables, fry the onions till golden brown and drain them on kitchen towel.similiarly fry the cashew nut. Keep it in air tight container to keep the crispiness. Mix the milk and saffron and keep it aside to get dissolve.

Boil the rice.. take 4:2 ration. 4 cups of water and 2 cups of rice. Add kali miri, 4 tej patta, 5 lavang. Keep the rice semi cooked. Drain the water in muslin cloth and keep it to aside to get cool.

In kadai add oil and saute all the chopped vegetables and keep them aside. Again it shouldnt be cooked. This step is to give vegetables the crunchiness.

In same kadai add ghee and add all khada masala and saute it till you can smell the aroma of spices. Then add the onion and saute it till golden brown. Add all the spices and saute again for 2 min. Add the vegetables and stir them. Add little water, curd, salt, sugar and mix them well and close the lid. Let it simmer for 10 min. At the end add kasuri methi. Mix it and switch of the gas. Here the vegetables will be half cooked.

Now let's start to layer the biryani. Grease the mould in which you will layer the biryani. The first layer should always be of vegetables and then layer it with rice.

Garnish every layer with fried onions, fried cashewnuts, ghee, saffron milk and coriander leaves.

Cover the pan with lid and keep a heavy thing on it or seal the lid with wheat dough.keep a tava on gas and on top of tava keep the mould.let it cook for 15 min.

Now for dungar. Burn the charcoal on gas. Keep a small bowl on top of biryani. Keep the charcoal on it and immediately add 1 tspn of ghee and close the lid. It infuse the smoke of burnt charcoal in the biryani and enhances the taste. Keep it only for 3 min.

Ready to relish the mouth watering, charcoal smoke infused and aromat dum biryani..
