I bought a new miso at a local shop and had to try it! I quickly made this delicious, easy, and fast ramen dish.

Bring water to a boil with a little salt and soy sauce. Boil the egg for 6 minutes, then transfer it to a bowl of ice water.

Cook the noodles according to the package instructions. Place them at the bottom of a bowl and drizzle with a few drops of sesame oil.

Grill the chicken thigh on a very hot skillet, skin side down first, until the skin is crispy and golden brown.

Peel the eggs and marinate them in soy sauce. For best flavor, let them soak for a few hours.

Bring the chicken broth to a boil with a splash of almond milk to add richness. If using vegetables, cook them in the broth and set aside. Turn off the heat, add a tablespoon of miso, and stir well.

I only used broccoli because I didn’t have more vegetables, but feel free to add mushrooms, green onions, leeks, bok choy, or whatever you like.

Assemble the bowl: Place the noodles at the bottom, pour in plenty of broth, add the chicken and egg on one side, and the vegetables on the other. Garnish with chives, sesame seeds, and chili flakes.
