In a bowl add yoghurt, half of all the spice powders and Kasurimethi and Mustard Oil. Add the lemon juice and salt accordingly and mix everything well. Add the paneer cubes and diced vegetables. Marinate for 3-4 hours or overnight.

Next take a small bowl and place piece of hot coal in it. Drop some ghee and place it inside the marinade. Cover it with a plate or lid and let it rest for some time. This is to give a smoky flavour to it.

Now grind the onion, ginger and garlic to a fine paste. Heat a pan with oil and add cumin seeds. When it spluter, add the onion paste and fry for few minutes.

In another pan grill the paneer and Vegetables in batches and keep aside, until you prepare gravy. Both can be done simultaneously.

Now add tomato puree and all the remaining spice powders and salt. Saute until oil oozes out. Then add 1/2 cup of water and let it boil.

Add the grilled paneer and vegetables to the gravy and give a good gentle mix. Add sugar (optional) to balance the taste.

Sprinkle garam masala powder and kasurimethi as the finishing touch. Also add a tbsp of fresh cream or 2-3 tbsp of milk for richness and taste in texture. Serve hot with homemade Naan😋
