Spinach and Feta Croquettes

1- Steam the potatoes until tender, then drain and mash them with a potato masher. Set aside.

2- For the spinach filling, cook the spinach in water or steam it (if using frozen spinach, sauté in a skillet). Rinse under cold water to stop the cooking, then drain well to remove excess water. In a skillet, sauté the onion in a little oil, then add the spinach and spices. Mix in the crumbled feta cheese.

3- Melt the butter in a saucepan, add the water and salt, and bring to a boil. Remove from heat and add the flour. Stir with a wooden spoon until a dough forms. Add the eggs and mashed potatoes, then mix with a spatula until the dough is smooth.

4- Shape the dough into balls, make a small indentation in the center of each, and fill with a little spinach mixture. Gently seal the balls and place them on a floured baking sheet to prevent sticking. Heat your deep fryer or a pot with oil, and fry the croquettes until golden brown. Enjoy!
