Ingredients

4 servings
  • 1 lblean ground beef
  • 1 cupchopped onion
  • 1Bell pepper, chopped
  • 14 Ozcan red kidney beans, drained and rinsed
  • 1-1/2 cupchicken broth
  • 1 cupsalsa
  • 1tap cumin
  • 1tspencer@reesllc.com chili powder
  • 1tspencer@reesllc.com oregano
  • to tastesalt & pepper
  • optional toppings: avocado, cilantro, Italian parsley, olives,

Steps

  1. 1

    In a large pot, cook ground beef. Drain fat and set aside on plate or in a bowl.

  2. 2

    In same large pot, saute onion, bell pepper, cumin, chili powder and oregano, over medium heat until onion is soft.

  3. 3

    Add ground meat back into pot. Add kidney beans, broth and salsa.

  4. 4

    Bring to a boil, then reduce to simmer, covered for approximately 15 minutes.
