Ingredients

  • 4 cupscooked rice
  • 3large eggs (lightly beaten)
  • 2carrots (peeled and diced)
  • 1medium sized onion (chopped)
  • 2 clovesgarlic (minced)
  • 3 tbspvegetable oil
  • 2spring onions (thinly sliced)
  • 3 tbspsoy sauce
  • Salt (to taste)
  • 1 tbspgrated ginger
  • 1 cupfrozen peas
  • 1 tspfreshly ground black pepper
  • 3medium sized capsicum (diced)

Steps

  1. 1

    In a large skillet over medium heat, heat 1tbsp vegetable oil
    •Add eggs & let sit for few seconds before lightly scrambling and folding the eggs over itself
    •Remove from skillet and set aside

  2. 2

    In the same skillet, heat remaining vegetable oil and add onion & carrots
    •Cook for 5mins stirring occasionally
    •Stir in ginger, garlic, black pepper, peas & spring onions and cook for 1-2mins

  3. 3

    Add rice and stir in soy sauce, salt & capsicum
    •Toss to combine and fold in scrambled eggs

  4. 4

    Serve with shredded beef sauce!
