In a large skillet over medium heat, heat 1tbsp vegetable oil
•Add eggs & let sit for few seconds before lightly scrambling and folding the eggs over itself
•Remove from skillet and set aside - 2
In the same skillet, heat remaining vegetable oil and add onion & carrots
•Cook for 5mins stirring occasionally
•Stir in ginger, garlic, black pepper, peas & spring onions and cook for 1-2mins - 3
Add rice and stir in soy sauce, salt & capsicum
•Toss to combine and fold in scrambled eggs - 4
Serve with shredded beef sauce!
