I fell in love with the word frittata before i ever created one. This recipe includes a basic frittata recipe which allows you to customize it however you'd like. The one i created was a roasted red bell pepper frittata which was a crowd favorite for Mother's Day.

Preheat oven to 400 degrees

Whisk eggs, milk, garlic, & salt until well combined. Set aside.

Heat 1/2 teaspoon of olive oil in a cast-iron skillet over medium heat. Add shallot/onion and salt and pepper & cook about 5 mins. Add red peppers (& spinach). If spinach, saute until withered & add egg mixture & gently shake pan to distribute. Sprinkle with cheese & bake 15 to 20 minutes or until eggs set. Season.
