Place all the ingredients in a blender and blend until smooth. Let the batter rest for 5-10 minutes so the bubbles settle and the coconut flour and psyllium absorb the moisture. Add water if the batter is too thick.

Pour two large tablespoons of batter into a hot skillet greased with butter or nonstick spray.

Cook over low heat for 3 minutes until bubbles form, then flip and cook for 1 more minute on the other side. Wait until they are nicely browned, as they are delicate and can break easily.

Repeat with the remaining batter.

For the filling, use a hand mixer to blend all the ingredients together.

Assemble by layering crepes and filling alternately, finishing with filling and your favorite fruit.
