Ingredients

  • 1/4 cupGhee
  • 1 1/2 cupall purpose flour (maida)
  • to tastesalt
  • 1 tbspoil
  • 1 cupsalt for baking
  • 1/2 cupwater
  • 2-3boiled mashed potatoes
  • 1/4 tspred chilli powder
  • 1/4 tspcoriander powder
  • 1/4 tspamchur(dry mango) powder
  • 1/4 tspgaram masala
  • 1 cupboiled peas

Steps

  1. 1

    Take a ghee in vessel and heat it and melt it. Now let it cool down to normal temperature. Then take a bowl full of ice and put ghee vessel on it and stir it continues. After few minutes we can see that our ghee become solid in white colour. And our puff butter is ready.

    Now take a all purpose flour, add salt and oil, Mix well. Now add water and Knead a medium Doug. Not too soft nor hard. Apply some oil on it and Knead it.

    Now take dough in the well cleaned platform surface dust some dry flour and Knead it well for few minutes. After the roll it into square sheet. Apply butter on whole sheet that we made out of ghee.

    Fold it half from right then from left over it. Then fold over half on eachother. Now put it in air tight container and put in freezer for 15 min.

  5. 5

    After 15 min take a sheet dust a dry flour. Then again roll it out into square thin sheet. Again it fold it on the same way as mentioned in step 4. Put it in the air tight container and freeze it for 15 min.

    Again repeat the whole process for 4-5 time.

    For making stuffing of parties. Take messhed boil potatoes, boiled peas, then add all masala salt, red chilli powder, coriander powder, garam masala, amchur powder, and mix it well.

    Now take the finally the puff dough from freezer then again roll it square sheet and divide it into square parts with the help of pizza cutter or knife.

  9. 9

    Now take one square part put stuffing on it and fold it in triangle shape. Even you can fold in rectangular shape.

    Now in big pan add salt 1 cup and cover it and heat it on high flame. Now take baking try Grease it with butter the put folded puff on it. Keep a gap between eachother. Apply the butter on puff. Now on the hot pan put stand on it and put baking try on it, cover it and let it bake for 15- 20 min in slow to medium flame.

    After 15-20 min check the puff it becomes double in size and golden brown colour in the bottom portion of puff. Turn all parties and again bake it for 10min.

    After 10-15 min we can see that it baked from both of the side with golden brown colour. Take it off the flames and puff Paties is ready to serve. You can see that many ayer are come out on the puff.

  13. 13

    This layers are generated through the 4-5 time rolling folding process of dough sheet that we does in 4-5 step.

  14. 14

    Fyn hygienic to healthy as we used ghee butter that will not affect to health. Puff is ready to serve with tomato catch-up.
