Ingredients

20 minutes
  • For the sauce
  • 1-2cascabel chiles
  • 1dried chile (such as guajillo or pasilla)
  • 1-2arbol chiles (optional)
  • 1garlic clove
  • Salt to taste
  • For the dish
  • Panela cheese to taste
  • as neededCorn tortillas (day-old if possible),
  • Chopped onion to taste (optional)
  • Cooked rice for serving, to taste
  • Lettuce for serving, to taste

Steps

20 minutes
  1. 1

    Boil the chiles and garlic until they are soft.

    Blend the chiles and garlic with the water used for boiling. Add salt and pepper to taste.

  3. 3

    Pour the sauce into a skillet and cook for a few minutes until it thickens. It's now ready to use.

  4. 4

    Grate the cheese. Dip each tortilla in the sauce, place it on a plate, add the cheese (alone or mixed with onion), and roll it up. Repeat as needed and serve.
