Boil the chiles and garlic until they are soft.

Blend the chiles and garlic with the water used for boiling. Add salt and pepper to taste.

Pour the sauce into a skillet and cook for a few minutes until it thickens. It's now ready to use.

Grate the cheese. Dip each tortilla in the sauce, place it on a plate, add the cheese (alone or mixed with onion), and roll it up. Repeat as needed and serve.
