Lauki kofta curry with brown rice

Peel and grate Lauki. Squeeze out the water. Add gram flour and rice flour. Now add ginger garlic paste, salt and chill powder.

Grease palm with oil and take small portion of mixture and turn into round shaped ball. Make 7 to 8 balls. Heat oil and add prepared balls in it and deep fry till golden brown.

Gravy - blanch the tomatoes and crush them with cashewnut. Heat oil and add chopped onions and ginger garlic paste and stir fry. Add tomatoes and stir fry For five minutes. Add coriander powder chilli powder, turmeric powder and Salt and mix well.

Add water and cook for 5 minutes on medium flame. Add koftas. Garnish with coriander leaves.

Brown Rice : Soak 1 cup brown rice in water for 1/2 an hour. In a pan take 2 cups of water and add rice to boil. Onces the water absorbed and rice cooked remove from heat and serve hot.
