Super simple crust with only 2 ingredients. Thick, creamy, rich and delicious with a refreshing lemony sweetness! Dairy and gluten free. I used a 300W stick blender, if you have a more powerful blender or food processor, the filling will be even creamier :)

Ingredients

Makes 8 squares
  1. Crust
  2. 3/4 cupdessicated coconut 🌴
  3. 1banana 🍌
  4. Filling
  5. 2/3 cupraw cashews (soaked overnight to soften)
  6. 1/3 cupcoconut cream
  7. 2 tbspcoconut oil (melted)
  8. 1banana 🍌
  9. Juice of 1 lemon 🍋
  10. Optional : Tumeric powder for colour

Cooking Instructions

    Blend banana. Mix banana with dessicated coconut. Pressed filling into a pan. I used a loaf pan. Baked in 180degrees oven for 20-25 mins. Let cool completely.

    Blend cashews, banana, coconut cream, lemon juice till combined. Add in coconut oil and blend.

    Pour onto cooled crust. Freeze for 4 hours or more.

    To serve, take it out of the freezer for 15-20 mins to thaw. Enjoy!
