Shrimp and Pork Simmered in Coconut Water

Shrimp peeled and simmered in coconut water with slices of pork that have a little bit of fat—this was a dish my kids loved when they were little. They would sit quietly and eat every last bite without needing any encouragement!

Steps
- 1
Thinly slice the pork and marinate with 1 teaspoon fish sauce, seasoning powder, and sugar. Peel the shrimp and marinate the same way, adding black pepper. Once the pork is seasoned, heat oil in a pan and sauté minced garlic, then add the pork and stir-fry until it firms up. Pour in the can of coconut water and simmer over low heat until the pork is tender.
- 2
When the pork is tender, adjust the seasoning to taste, then add the shrimp. Stir and flip the shrimp until they turn golden on both sides. Let the sauce thicken slightly, then add chopped green onions.
