Creole Negroni

I've already talked about the Negroni, one of the most famous cocktails in the world, in my recipe for "Negroni-Infused Apple Cake"... The mix was created on a summer evening in 1919 by Count Camillo Negroni and made by his bartender Fosco Scarselli at the Casoni grocery and perfumery on Via de’ Tornabuoni in Florence. Since then, dozens of versions have been created, all with alternatives to gin like vodka, rum, or brut sparkling wine. I love it and make it for myself every evening before dinner, trying out all sorts of creative variations. The one I'm sharing today is the most exclusive and intoxicating, featuring an infusion of muddled lime peel, navel orange peel, green peppercorns, pink peppercorns, and whole juniper berries. Please note: the Negroni is a very strong cocktail (about 28% ABV) and uses a full 3 oz (9 cl) pour, so avoid drinking it if you plan to drive!

Muddle the citrus peels, peppercorns, and juniper berry in a mortar (preferably a chilled marble one). Add the gin and let it rest in the freezer for a few minutes.

Fill a lowball (old-fashioned) glass about 3/4 full with ice cubes.

Strain the infused gin into the glass, filtering out the solids. Add the vermouth, then the Campari, and stir gently with a bar spoon.

Garnish the glass with a slice of orange or lime, or even a thin slice of Granny Smith apple (which is delicious to eat while sipping the cocktail). Enjoy slowly, but don't let the ice melt too much. Negroni pairs well with a rich charcuterie board, flavorful meats, or fruit.
