A very simple dish prepared with cucumber, coconut and yogurt. It is usually served as an accompaniment for rice.
Steps

Scrap the cucumber and cut into pieces. Pieces need not to be small since we are going to grind it anyway. Keep all ingredients handy

In a Mixer jar, put cucumber, coconut, 3-4 gloves of garlic, ginger, coriander leaves, green chillies and salt.

Grind it to fine paste. Do not add any water.

For Tempering, in a kadai, pour some oil. Once heated, put mustard, garlic and curry leaves. Do not over-fry.

Now add the grinder paste into the kadai and mix well.

Finally, add curds into the mixture. Rise the flame to high for 10-15 seconds and turn off the heat. Do not boil the paste. Add more salt if needed.

There you are! Cucumber Pacchadi is ready. It goes well with hot rice, and omelet at the sides.
