Ingredients

3 servings
  1. 2 handfulbaby spinach
  2. 1 1/2 cupsona masoori rice(or any other rice)
  3. 3 1/2 cupwater
  4. 1 inchginger
  5. 5-6garlic pods
  6. 2 tbspoil + 1 tsp oil
  7. 2 tspghee
  8. Whole spices (2 cloves, 1 cardamom, 1 inch cinnamon stick, 1 star anise, 1 stone flower)
  9. 5-10split cashews
  10. 10-15mint leaves
  11. 1onion sliced
  12. 5-6stem coriander leaves
  13. 1small tomato chopped
  14. 2green chillies slitted
  15. 1 1/2 tspred chilly powder
  16. Salt as required
  17. dropsFew lemon

Cooking Instructions

    Wash and soak the rice for 30 mins

  2. 2

    Heat a pan with 1 tsp oil, add spinach and sauté until it becomes soft. Cool it and grind it along with garlic and ginger.

    Heat a pressure cooker with oil and ghee. Add all whole spices and cashews. Let it splutter. Add onion and green chillies. Sauté until it becomes soft. Add ground paste and sauté until raw smell goes. Add mint and coriander leaves and sauté for few mins. Add tomato and sauté until it becomes soft. Add chilly powder and salt.

    Add water and rice. Add few lemon drops. Pressure cook it for 3 whistles.

    Enjoy with onion raita!
