Ingredients

6 servings
  1. 2 bunchesspring greens
  2. 4peppers
  3. 300 grSpanish rice
  4. 100 grbulgur
  5. 1/2canned tomato paste
  6. 1 tsptomato paste
  7. 1 tspchilli paste
  8. 100 mlolive oil
  9. 1/2 bunchparsley (fine choppef)
  10. 1large onion (fine chopped)
  11. 2fresh onions (fine chopped)
  12. Salt
  13. Black pepper
  14. Chilli powder
  15. Dry mint

Steps

  1. 1

    First, boil spring greens in a large pan for 10 mins. Carve peppers inside and remove seeds.

  2. 2

    Put the rice, bulgur, onions, canned tomato, pastes, oil in a large bowl and mix. Add salt, pepper and spices. Stir all of ingredients well.

  3. 3

    Cut the middle of the spring green leaves and put rice mix on leaf. Fold both sides and roll. You can use same rice mix to stuff peppers as well.

  4. 4

    Put all rolled leaves and stuffed peppers in a pot. Mix 200 ml water, 2 tsp oil and 1 tsp tomato and add this sauce on rolled leaves and stuffed peppers.

  5. 5

    Close the lid and cook for 20-25 mins.
