Put the ginger, garlic, tomatoes into a food processor untill smooth. Set aside.

Put the potatoes in a large saucepan, boil for 8-10 minutes on medium heat, until just tender. Drain and set aside.

Heat oil in a non-stick pan. Add cumin, mustard seeds fry for a second add onion, salt saute for a minute add green chili & all the spices stir well.

Now add tomato mixture mix well and simmer for 2-3 mins, then stir the potatoes cook for 3-4 minutes.

Garnish with coriander leaves Serve.
