For birthdays we always try and go a little more extravagant, so not a healthy bake but really delicious for a treat! #mycookbook

Preheat the oven to 150°C fan

Cream butter and caster sugar together

Beat in 1 egg at a time
- 4
Add the grated zest of a lime and vanilla essence
- 5
Sift in flour and beat, add a little milk until the mix is loose enough it falls from the spoon
- 6
Place in a loaf tin and bake for 55minutes in preheated oven
- 7
Cream butter and grated lime zest together
- 8
Mix in sifted icing sugar and milk until a smooth consistency and leave in the fridge to stiffen whilst the cake cools

Divide the icing into two separate bowls and in half add some diced strawberries, cut the cake in half and place this on the bottom layer
- 10
Spread the remaining icing on the top of the top half and some sliced strawberries before placing it on the bottom half
