Rinse the basmati rice gently 2-3 times and soak it in clean water for 30 minutes. In a pan, add 2 cups (about 480 ml) of water and boil the soybean nuggets until they are about 70% cooked. Once cooled, squeeze out the excess water from the soybeans with your hands.

Slice the potatoes, onions, and green chilies lengthwise. Heat oil in a pressure cooker. Add mustard seeds and let them splutter. Add black peppercorns, bay leaf, and cloves, and sauté. Add grated ginger and cook for a minute.

Add potatoes, onions, soybeans, red chili powder, salt, turmeric, and garam masala. Mix all the spices well and cook on low heat for 5 minutes. Once the spices are mixed, add 2 to 2 1/2 cups (about 480-600 ml) of water, as needed, and bring to a boil.

When the water boils, add the soaked rice and gently stir. Close the pressure cooker lid and cook on medium heat until you hear one whistle. Release the pressure and open the lid. Gently fluff the rice with a spatula or spoon, then cover loosely and let it rest for 5 minutes.

After 5 minutes, gently mix the rice again. Serve on a plate, garnish with cilantro, and enjoy with plain yogurt or raita.
