Ghevar

Ghevar is a Rajasthani cuisine sweet.
Steps

Take Ghee and rub with ice cubes. Rub the ghee in circular motion till the ghee thickens and turns creamy and fluffy. Now add maida and mix it well. Add milk and mix it well.

Add 3 Cup of water and lemon juice and make a smooth flowing consistency. Let it rest for 5 minutes. In a pan heat the ghee. The temperature should be moderate. Pour batter keeping a good distance from hot ghee. The batter will splatter and later the froth subsides. Repeat it for 10-15 times. Fry it on medium flame.

Pull the ghevar out once cooked, and drain off the ghee completely. For Sugar Syrup take a pot. Put sugar and water into it. Heat it and stir continuously. Make one string consistency sugar syrup.

Take a ring and put ghevar over it, pour sugar syrup on ghevar, garnish with rabdi and chopped nuts.
