Keto Veg Stir-Fry Broccoli Rice

Corona has really reduced the physical activities of a person. Getting out of your house seems like a risk.
But we can’t let no physical activities affect our weight. I realised in the paste 2 months due to no workout and WFH, I had started putting on som weights.
I thought of following keto diet. Not an immediate keto with carbs less than 50g. But a slow process, i.e. 1 meal being a keto.

I started searching for keto vegetables (as I am new to keto). Realised that broccoli and mushroom are among them, along with other vegetables which are used in Indian kitchens on a regular basis, like tomatoes and capsicum.

I have head about “broccoli rice” which is nothing but the resultant of broccoli in a food processor (rice like size). Now once you have rice substitute, remaining part is easy - frying the other vegetables which are to be added to the rice. Also to get a tangy flavour, I used some lemon juice.

Let’s get to the recipe.

Ingredients

2 servings
  • Broccoli Rice
  • 1Broccoli diced (medium)
  • 8button mushroom diced (medium - large)
  • 1Tomato diced (medium)
  • 1Green bell pepper diced
  • 1Carrot diced [optional]
  • 1 tspSalt
  • 1 tspBlack pepper
  • 1 tbspOlive Oil
  • Topping
  • 2 tbspLemon juice
  • 1 sliceCheese [Optional]

Steps

    Put diced broccoli pieces into food processor and run it till broccoli gets into rice size.

  2. 2

    In a frying pan on low-medium flame, put olive oil and let it sputter. Place the tomatoes in the pan and keep on stirring it. After 2 minutes add other vegetables (except “riced” broccoli) and keep on stirring them too.

    Add the “riced” broccoli in the pan once the vegetables are cooked. Stir fry the mixture for 2 minutes and then add lemon juice to it. Stir fry for a few more minutes on low-medium heat, till the smell of raw broccoli goes away and the rice gets dry.

    Transfer the vegetable stir-fry broccoli rice to a bowl. For cheese topping, cut the cheese slice into thin strips and place it in a criss-cross fashion on top of the rice. Serve hot.
