Steps
- 1
Set aside 2 tablespoons of sugar. Melt the butter in the microwave for a few seconds and set aside.
- 2
In a bowl, beat the eggs and add the vanilla extract. Continue beating until the vanilla is well mixed in.
- 3
Add the sugar (except the 2 tablespoons you set aside), ground almonds, and cornstarch. Continue beating until everything is well combined.
- 4
Add the melted butter and keep beating until fully incorporated. The almond cream is now ready. Set aside.
- 5
Grease a round baking pan with a little butter, making sure to cover the sides. Sprinkle a little flour over the surface to prevent sticking.
- 6
Fold the puff pastry and lay it in the round pan, about 10 inches (25 cm) in diameter, centering it to make it easier to fit.
- 7
Press the dough so it reaches all the edges and there are no air pockets. Use a fork to prick the base all over, then roll a rolling pin over the edges to trim any excess dough.
- 8
Pour the almond cream into the pan and tap the pan gently to level the cream.
- 9
Sprinkle the sliced almonds evenly over the cream, then add the reserved sugar on top.
- 10
Preheat the oven to 350°F (180°C). Bake with both top and bottom heat for about 25 minutes. Watch to make sure the top doesn't get too dark.
- 11
Once out of the oven, dust with powdered sugar. Let cool before removing from the pan.
