The original recipe calls for 3 1/3 cups (800 ml) of water, but I prefer a softer texture, so I use 3 3/4 cups (900 ml). Pour the water into a pot, gradually add the grass jelly powder while stirring until dissolved, then add the sugar. Place the pot on the stove.

Heat gently, stirring constantly. When the mixture comes to a boil, stir a bit faster until it thickens slightly.

Pour the mixture into a prepared bowl and let it cool. Once set, transfer the jelly to a cutting board and cut into small cubes. Serve with whole milk poured over the top. You can also add a few drops of banana extract for extra flavor if you like.
