Steps

Firstly add urad dal, rice and methi seeds to a large bowl. Rinse them very well several times under water

Soak them together in enough fresh water for 6 to 7 hours.

Rinse and soak poha just 10 mins before grinding the dosa batter.

Drain the water from the dal, rice and methi. Also drain water from poha. Add them to a mixie jar Except poha. Pour water as needed. Grind to a smooth paste. Add poha in last batch. Transfer the mixture to large vessel.

The consistency of the dosa batter must not be very thick or thin otherwise the batter will not ferment well. Cover the dosa batter and keep this in a warm place until fermented.

Next morning gently stir the dosa batter. Add water to thin it down to make it of a pouring consistency but should be thick. Add salt as required. I have added little sugar to get that nice brown colour.

Grease a dosa pan with few drops of oil and splash water on it and wipe it off. Pour a ladle full of dosa batter in the center of the pan or tawa

Spread it evenly in a circular shape to get a dosa. Sprinkle some oil on it and keep the flame medium to high. can apply butter instead of oil to make it much tastier. Enjoy the dosa with yellow potato bhaji green coconut chutney or chutney
