This is an authentic bengali recipe .. I love the complexity of this dish ..you simply cannot use the onion garlic tomato combo for this one .. it is time taking but it is delicious and amazing that how everything comes together to give you different flavours and how every ingredients uplifts the other ...this goes with rice, roti , paratha .. anything.. 😊

Peel the pointed gourd with a sharp edged spoon or peeler.

Now,make a small cut and use knife to scoop out the seeds and pulp of the pointed gourd.

3. Add salt and turmeric to it and steam it on medium flame for 5-6mins only.

4. Make holes in it usong a fork and keep aside.

Now, for the filling..
1. Mash the boiled potatoes. - 6
Now the seeds you scooped out make a paste of it add 5-6 cloves of garlic and a few piece of fresh coconut. This will bring a nutty flavour to the filling.Now in 1tbs oil add this paste and cook it well.

Add zeera powder, coriander powder, crushed black pepper and salt to the paste and add the mashed potatoes to it mix well.

Now, fill the hollow pointed gourd with this filling properly and leave at least 2cm space while doing so.

Now,make a thick batter of besan with water and seal the openings.
Then fry it at medium heat in oil till cooked. - 10
Now, for the curry.. it's a light curry
1. In 1 tbsp oil add zeera, one basil leave, add the chopped onions. Saute for a bit. - 11

Add turmeric, chilli powder, zeera powder Coriander powder green chillies chopped, grated ginger, grate some coconut and fry this till it leaves oil add salt and a lil bit of sugar,then add water and when the water boils lower the flame and add the cashews and rasins and the gourds to it and let it simmer for 10 mins. Add some garam masala before turning off the heat.
Done.
