Vegan Burger

So I know we love meat here in Kenya but I decided to go outside the box. Spoiler alert, it's delicious! Got the fununu that flax seeds and chia seeds are alternative binders to egg so I went for it. The first two batches were a bit soft so I soaked a slice of bread in milk (do water if vegan), squeezed it dry and added it. But you know what? I loved the first batch more! It just kind of gets less soft as it cools. For flavouring I used my leftover peas (see sofrito recipe), so be creative with your flavours to your liking. For burger bun I used Tuskys cinnamon and raisin rolls and they just elevated the flavour by a lot. Enjoy!

Mash the peas.

Grind the chia and flax seeds and wet with a little water until sticky.

Mix the chia/flax mixture into the mashed pea mixture until well mixed.

(Optional) Mix in the soaked and squeezed bread.

Heat oil in a pan, form mixture into patties and pan fry.

Fry until both sides are well browned.

Enjoy on your burger.
