    Start by preparing the mashed potatoes. Peel the potatoes and place them in a pot with the onions cut into large pieces and the leek sliced. Lightly salt, cover with water, and boil for about 20-25 minutes.

    When the potatoes begin to fall apart, remove from heat and drain all the water. Transfer to a bowl and mash the ingredients with a fork.

    Add the heavy cream, a pinch of salt, pepper to taste, nutmeg to taste, and mix everything well until you achieve a smooth and homogeneous puree. Set aside.

    Place the duck confits on a baking sheet and sprinkle with sugar. Bake for about 15 minutes at 195°C (about 383°F), or until the skin is nicely browned.
