Muslim Mutton Biryani with Jeera rice

Wash and drain the water from the mutton and pressure cook only mutton with 1 inch crushed ginger pcs and salt for 4 whistles.

After the steam releases, strain out the mutton into separate plate and mutton stock(water) separately

Wash and Soak the rice for 30 minutes and filter the water from it.

Place the heavy bottom vessel and heat oil & ghee, add Whole to temper ((Cinnamon stick - 1 inch, Cloves – 3, Cardamom – 3) and let it sizzle

Add in sliced onions & crushed small onions Cook till golden brown.

Add in ginger garlic paste, cook it till the raw smell goes.

Add Green chilies, followed by cooked & strain mutton and mix well.

Add in chilli powder and garam masala powder, yoghurt and mix well.

Last Add Tomato pieces followed by mint & coriander leaves and mix well. The tomatoes should not be mushy. (cook for 5 mins)

Then add the cooked mutton water 3.75 cups and stir and cook until oil gets separated.

Now add in rice and check the salt or adjust as per the taste.

Once the rice is half cooked after 10 mins.

Add the lemon juice and mix well.

Cover and sim for 15 – 20 mins.

Switch of the flame add 1 tablespoon ghee…. Rest it for 30 mins before serving.

Biriyani is ready to serve
