Black Magic Cake

This recipe was given to me by my high school science teacher, Mrs. Gregory, amd this was the first ever chocolate cake I’ve ever baked by myself. It’s moist, fluffy and devilishly delicious.
The recipe calls for 2 cups sugar but I used 1 and 1/2 cups instead.
In the recipe, the baking time was 50-55mins for rectangular pan but in my oven, the cake was done within 40 mins so baking time may vary.

Ingredients

Approx 50 mins (for 13x9x2 in pan)
24 servings
  1. 2 cupssugar
  2. 1and 3/4 cup flour
  3. 3/4 cupcocoa powder
  4. 2 tspbaking soda
  5. 2 tspbaking powder (if using local brand)
  6. 1 tspsalt
  7. 2eggs
  8. 1 cupstrong black coffee
  9. 1 cupsour milk (mix 1 tbsp vinegar to milk and let stand 5 mins)
  10. 1/2 cupvegetable oil
  11. 1 tspvanilla extract

Cooking Instructions

Approx 50 mins (for 13x9x2 in pan)

    Heat oven to 350F.

    Grease and flour 2 8in round pans or 1 13x9x2in rectangular pan.

    In a large bowl, mix large ingredients.

    Add in remaining ingredients and beat on medium speed for 2 minutes. The batter will be very thin.

    Pour into pans/ rectangular pan.

    Bake for approx. 40-45 mins for round pans or 50-55 mins for rectangular pan.

    Test with a toothpick to make sure it comes out clean, especially in the center-you may need to add extra baking time.

    Cool 10 minutes and transfer the cakes to wire racks. Or leave in rectangular pan and cool completely.
