Ingredients

  • 400 gCream Cheese (baking)
  • 200 gsour cream
  • 150 gsugar (3/4 c)
  • 2eggs
  • Lemon zest
  • Vanilla
  • 20 g (2 tbsp)flour
  • Crushed digestive bases

Steps

  1. 1

    Prep the crushed digestive butter mix

  2. 2

    Mix the cheese and sour cream together

  3. 3

    Add eggs one at a time

  4. 4

    Add the vanilla and lemon zest

  5. 5

    Add the flour and do not overmix!!

  6. 6

    Add to the digestive cookie base and bake in the oven at 150°c for exactly 15 mins

  7. 7

    After 15 mins open the oven and leave to set for 3 mins take out and leave to cool completely

  8. 8

    Leave in fridge overnight

  9. 9

    Enjoy!
