I know it's nothing like the real couscous that maroccan people cook. When I lived with 2 girls from marocco, they made me taste the best couscous in my life with so much love and effort !

  • 250 gcouscous
  • 250 mlwater
  • 50 gscallions
  • 150-200 gfrozen veggie mix
  • 60 gbutter
  • 1 tbspoil
  • 1 tspsalt

Steps

  1. 1

    First prepare the couscous. I use the brand in the photo and cook it according to the instruction: 1. Boil the water in a pot, add salt and oil. 2. Add the couscous and remove the pot from the stove. Mix gently. 3. Cover with a lid and forget about it for 3-4 minutes. It should absorb ALL water by that time.

    While the couscous is absorbing water in the pot, quickly grab a decent-size pan and through it on the stove on high heat. Do NOT put any oil. Let it sit.

    Through some frozen mixed veggies that you had in your freezer since Christmas. I had a mix with peas, carrots, beans, corn etc.

    To make it more flavored and make Gordon Ramsay proud of you, chop some fresh scallions from your garden and through them in the pan with the low-key frozen stuff.

    Yep, that was more than 3 minutes, means we can check on the pot with the couscous. If not burnt, add butter, put the pot on the stove just for a bit more until the butter is fully melt and mix with a fork until the couscous is nice and grainy.

  6. 6

    If you're not patient enough, just through the couscous with not-yet-melted butter into the pan with the veggies, put the pan on low-medium heat and mix nicely with a wooden spatula, because why not.

  7. 7

    After a couple of minutes, when everything is nicely mixed, you're done ! Enjoy it while it looks nice in the pan and eat it with elegance at work even though it's all smushed in your plastic container.
