Ingredients

  1. 2market fresh red snapper fish
  2. 1 cupchopped okra
  3. 1/2 cupchopped carrots
  4. 1/2 cupchopped bell pepper (any colour)
  5. 1 cupchopped Calabasas or squash
  6. 1/4 cupchopped spring onions
  7. 1/2 cupchopped red onions
  8. 1 tspturmeric
  9. 1/2 tspsalt 🧂
  10. 1/2 tsppepper
  11. 1 tspfish seasoning (optional but tasty flavor)
  12. 1 tsporegano
  13. 1 tspgarlic powder
  14. 1/4 cupolive oil
  15. 4 cupschicken or fish stock
  16. 1 clovegarlic chopped

Cooking Instructions

    Rinse fish with lemon 🍋 juice to take away raw odor. Pat dry fish 🐟 then rub generously on fish both inside and out, salt, pepper, fish seasoning, garlic powder, oregano

    Pour olive oil into frying pan and heat on medium heat. Once hot enough sear fish for 2mins on both sides.

    Add chopped vegetables to the pan and stir fry for 1min. Then add chicken stock.

    Cover and let simmer for 30mins or until fish and squash is tender. Stir occasionally while carefully turning fish on other side.
