Ingredients

  • 200 gcollard leaves, shredded
  • 1large onion, diced
  • 1large tomato, diced
  • salt and pepper
  • 1 cupchicken stock
  • 2 tbspvegetable oil

Steps

  1. 1

    In a heated pan, saute the onions

  2. 2

    Add in the tomatoes and cook to a paste. season.

  3. 3

    Pour in the stock, cover and let simmer

  4. 4

    Add in the collards and let simmer, while covered, until the liquid reduces completely
