Ingredients

  1. 2.2 poundscouscous (about 1 kilogram)
  2. 2/3 poundground za'atar (about 300 grams)
  3. Oil or butter
  4. Raisins and dates or dried figs, as desired
  5. Water

Steps

  1. 1

    Toss the couscous with your hands, gradually adding water.

  2. 2

    Gradually add the ground za'atar, then add a little oil.

  3. 3

    Place the couscous steamer (couscoussier) over a pot filled with water and steam the couscous until steam begins to rise through it.

  4. 4

    Remove from heat, sprinkle with a little water, and add some salt.

  5. 5

    Place the raisins and dates (or dried figs) in the bottom of the steamer, then add the couscous on top and steam again over the stove.

  6. 6

    Remove from heat, add some powdered sugar to taste, and serve.
