Ingredients

  1. 3 cupsrice
  2. 1 sachettomato (tasty Tom)
  3. Left over stew
  4. 2seasoning cubes
  5. to tasteSalt
  6. 2 teaspoontumeric
  7. Thyme
  8. Scotch bonnet chopped
  9. 1big Onion chopped
  10. 1/2 cupoil
  11. Nutmeg
  12. I big fish

    In a frying pan, pour the oil and heat up for few seconds. When hot, fry ur salted fish and set aside

    Perboil ur rice for 7- 10mins and rinse with cold water very well to remove starch and set aside

    Pour the oil used to fry the fish(I used just little cos there is enough oil in the leftover stew) in a pot, put ur chopped onions and fry for few seconds, add ur chopped pepper, then the tomato paste.

    Now add ur seasonings except salt and maggi and let the tomato paste fry for few seconds untill the oil start showing on top.

    Pour in ur leftover stew and add the fried fish into it. Season with the maggi and salt then cover to boil for 5 mins. The fried fish in the mixture will give it a different taste entirely 😋😋.

    After 5 mins, bring out ur fried fish from the pot and set aside. Add water in to the pot and leave to bowl for few seconds. Then add ur parboiled rice and stir together with a wooden spoon (I used omo orogun). The water in the rice should be on the same level with the rice, if not, add in a little water and cover to cook. Ur heat should be on a medium heat by now.

    After few mins, taste the rice and if the seasoning isn't enough, add more to ur desired taste.when the water is almost dried up, turn down ur heat to low and u can add in ur sliced tomatoes and onions(I didn't add to mine cos I don't like it). Cover to dry up completely and turn off heat.

    Give it a good stir, add ur fish on top and cover for about 10mins. Your Jollof is ready. U can serve with fried plantain.
