Lemon garlic shrimp pasta
When you need some tangy Italian comfort food, go for this.
Steps

Prep: Julienne the onion. Mince garlic. Cut spinach. Boil the corn and take it off the cob. Deshell, clean, devein the prawns.

Boil the pasta in 2 tbsps rock salt and water until soft. Drain it in a colander once done.

Heat a pan. Add 2 tsps butter and 1 tsps olive oil.

Add the onions. Cook until translucent. Add garlic. Cook until onions brown and garlic starts sticking to the bottom of the pan.

Add the prawns. Add 1/2 tbsp of salt. Cook until they turn pink. Add chilli flakes and pepper. Cook for another few minutes until most of the water evaporates.

Optional step: Add spinach and corn. Cook until the spinach wilts.

Add the pasta now. Mix it. Add lemon juice, coriander, 2 tsps of butter and the cheese. Mix thoroughly.

Serve with garlic bread.
