Cooking Instructions

Pre-heat oven 350° F.

Line cupcake pan.

Crush 12 gram crackers, to make 1 and a half cups of crumbs.

Add 6 tbls melted butter and 1/2 teaspoon cinnamon and stir well.

Lastly, add about 1 tbls to each cupcake liner, push crumbs with spoon downwards and slightly up the side so no need to pre-bake the crust.

In a separate bowl mix; 16. oz softened cream cheese, 3 large eggs and beat for 15 mins.

Then add 14. oz of condensed milk and stir

Scoop into cupcake pans and bake for 15 mins.

Then let them cool and refrigerate for 2 hours.

I came up with this recipe since I had an opened sweetened condensed milk in my fridge to use up. As far as cheesecakes go, these are pretty low maintenance to make. The addition of the whipped cream makes the texture of these fluffy, but if you'd prefer more firm, dense cheesecakes, then just leave out the whipped cream. Christina -

I made mini-sized cheesecakes with cupcake tins and small ramekins. This recipe should yield 10-12 of these bite-sized cakes.
