High Altitude Yeast Bread Loaf

Combine water and yeast and let sit until foamy. About 15 minutes.

Combine flour, oil, yeast mixture, sugar, and salt into large bowl. Knead until silky smooth. About 15 minutes. Place dough in large oiled bowl. Turn to coat. Cover with towel and let rise in a warm place until doubled. About an hour.

Preheat oven to 350°F. Grease a loaf pan.

Punch down dough and turn onto lightly floured surface. Shape into a loaf and place in prepared pan. Cover with towel and let rise until doubled. About 30 minutes

Uncover and bake 45 minutes for Italian style loaf.
