Cooking Instructions

Dry roast the whole species until they got fragrant. Add dry red chillies and roast for a while. Let the masalas be cool down

Grind the roasted masala. Now grind ginger garlic and mix with masalas.

Take roasted kasuri methi n mix with curd n grind well. Mix the curd, ginger garlic and the roasted masala well. Make it a paste. Wash the chicken pieces n marinate with salt n pepper n lemon juice.

Now marinate the chicken with the roasted masala and curd. Keep it in fridge for 3 to 4 hours. Heat a charcoal n place it in between the chicken. Add ghee n trap the smoke for 10 to 15 minutes. After that uncover the pan.

Now heat a grill pan n let it be hot properly. Then add the chicken pieces to the pan n grill them properly from both sides flipping n adding butter.

Take green chutney and curd n mix well. Melt the butter.

Take 2 tsp cream. Now take out the grilled chicken pieces in a serving bowl. Sprinkle chat masala. Add cream, curd n green chutney n mix well. Add melted butter over it n serve hot with chappati or rumali roti.

Cutting back on the butter will ruin the dish as it is the heart of the dish.If you like more spice add 1 or 2 chopped green chilli to the onion as you are sauteing and blend together into the onion paste.You can use tandoori masala paste but i find these too sweet and much prefer the powdered form. you can buy from Indian grocer or on ebay etc.Cream will make the dish more or less rich. feel free to adjust this ingredient as you please.Ideally you want the chicken to be ready to add to the gravy as it comes out of the oven. I place chicken in the oven as i begin to saute whole spices. The timing is up to you but don't worry if it doesn't match up perfectly. You're better off having the gravy ready early as you can just continue to add water if it thickens too much.
