Pot Roast Ninja Foodi 360 Meal

One pot meal, fast and simple. I use shoulder roasts here, but you can choose from a variety of cuts for pot roast. Price is my biggest factor in deciding which cut. The pressure cooker can pretty much turn a rock into pudding, so, whatever is on sale is what I buy and I trust the pressure cooker to make it tender and juicy. I've also used this exact same recipe with venison roast, and it worked perfectly. Choose a roast with the best fat marbling for added assurance it will be fork tender.
FROZEN ROASTS: This is timed for thawed roasts, but I've used rock hard frozen solid roasts before also. I just don't add the veggies, set the pressure timer to 90 minutes if frozen, release pressure, add veggies, set again for 10 minutes.
*Any pressure.cooker with saute feature will work. You don't need this model.

Cooking Instructions

Put nanoceramic liner in Foodi. Turn Foodi to Saute Hi and press start. Add olive oil.

Sprinkle kosher salt on both sides of roast. Add roast to heated oil in Foodi. Sear each side 5 minutes or until a golden brown crust forms. Work in batches if you have more than one roast.

Remove roast from pan and set aside on plate. Add balsamic vinegar and reglaze pan with wooden spoon. Continue stirring and letting simmer a minute or so until vinegar starts to thicken.

Add beef broth. Let simmer 3-5 minutes.

Add garlic, onion, potatoes, and carrots. Stir. Sprinkle onion soup mix over top.

Add seared beef cut back to Foodi over top vegetables.

Add pressure cooker lid and set valve to seal. Change mode to pressure cooker, hi, 35 minutes. Press start.

When done, quick release. Remove roast and vegetables to serving platter to rest.

Change Foodi mode to Saute Hi. Press start. Mix cold water and cornstarch. Add to juices in Foodi. Stir continuously with wooden spoon or silicone spatula until thickened into gravy.

This pot roast has been honed over the years to suit my taste. I prefer a pot roast with slices of beef, instead of shredded like some recipes, but if you like shredded, you can shred the beef instead. I use a pressure cooker to speed the process up, but if you don't have one, you can roast this traditionally in the oven with a dutch oven (adjustments are in the recipe). I find that 3 cups of total liquid is the right amount for using a pressure cooker but if you're using a dutch oven, add extra water as needed while it cooks. Lance Wilson -
