Ingredients

  1. 1/4 kgMutton liver
  2. 1 cupVinegar
  3. 1 tspGarlic paste
  4. 1/4 tspGaram masala
  5. 1/4 tspCrushed red pepper
  6. 1/4 tspRed chilli powder
  7. 1/4 tspTurmeric powder
  8. 1/4 tspChaat masala
  9. 1/4 tspTandoori masala
  10. 1 tbspYoghurt
  11. 1/2 tspGreen chilli paste
  12. 1/4 tspRoasted and crushed coriander seeds
  13. 1/4 tspRoasted and crushed cumin
  14. 1/4 tspSalt

Cooking Instructions

    Firstly,Dip kaleji in vinegar and garlic paste for 5 minutes.

    After 5 minutes,Wash the kaleji and strain out the water completely.Add all the spices along with yoghurt and green chilli paste.Marinate kaleji for 1 hour.

    Put 3 to 4 tablespoon oil on tawa or skillet pan then add marinated kaleji and cook for 10 minutes on low flame.Turn the flame high and stir continously for 5 minutes until the oil separates.At this point add green coriander and lemon juice.Turn the flame off.

    Cut the bun,On one side of bun spread chilli garlic ketchup then place kaleji,sliced onion and tomato ketchup.Cover it with other bun.Serve hot with ketchup or chutney,onion and fry kaleji.
